At Friday night’s opening of the 2023 Salon du Chocolat I made a bee-line for Maison Pralus.
There are always ready snacks of their famous cake, Le Praluline. An incredible brioche made with pink pralinรฉ chips (sugared almonds). It is a classic Lyonnaise dessert first made by August Pralus in 1955.
Everyone else was madly crowded around the stage, attempting to watch the annual chocolate fashion show… FYI they rerun the show everyday while the Salon is on, so you can catch it ๐
More than 500 chefs, artisan chocolatiers & producers from 20 different countries are present! Daina said these chocolates look like marbles. They’re filled with flavored ganache like caramel passion fruit, Litchi, Tahitian vanilla, Mexican lime from Maison Bertrand of Lyon.
Patrick Roger first created chocolate demi-spheres or domes and the rest of the world followed. Roger was not at the salon ๐ข
Beautiful cabosses de fรจves de cocoa - cocoa bean pods in the early stages before they turn brown.
One stand had this amusing purse shaped like a cocoa bean. If the price had been less I would have succumbed.
Dengo from Brazil went full-out bold colors. You entered a separate room completely wall-papered with their chocolate bar wrapping. Getting a sample drink of cocoa milk - surprisingly delicious. They also had it with alcohol.
Beautiful colored popsicles from Chartier - but no samples ๐ข
But right now, doing this post, I could run ๐♂️ to Porte de Versailles (ligne 12 - they open at 10:00 am - 7:00)
I just vacuumed up this little gift box of chocolate ganache from MOF Vincent Guerlais meant for my proprietor…
I guess I have to go back to the Salon.
Here is the right way to make tartiner, from Alsatian Jacques Bockel. Not that horrible industrial supermarket stuff everyone gobbles up.
Pateatartiner makes a set of daily servings of tartiner ☺️

The vanilla from Madagascar from รpices & Vanille de Granville.
A special display of bรปche de Noel gateaux had a beautiful, edible bunch of vanille Christmas cake. One can only dream what it tasted like…I could go on and on.

ReplyDeleteGood to see Maison Paries there. Since you introduced me to Paries I cannot go to le Grand Epicerie without a detour across the street to Paries. Their signature Kanougas, gateau Basque, chocolat LEMON peel are fabulous!
Go back for those Ourson Guimauve and a reward for your handyman landlord…good excuses!! Bon app!

DeleteBut when you think they are working with brown material all the time, adding color to brighten things up makes sense. Plus these chefs are truly artists in their own right andb visually gifted. Many have to make complicated chocolate sculptures as part of their education.
It would seem this is the event to attend stateside..

DeleteI would love this show but am afraid it might be chocolate overload. We always bring lots of chocolate home from Paris and my sister manages to get 4 large Pralulines into her luggage in addition to many pounds of chocolate. Yes, we do want more from the Salon..

More! More! I can never get enough chocolate, especially if I'm only dreaming over beautiful, inaccessible chocolates that won't add inches to my waistline. And that vanilla bean Yule log is fantastic!
